Finals are OVER!

I just want to scream, jump, yell, dance, and pat myself on my back! 
I am finally done with the most challenging quarter of school I have had so far! 
I passed all my finals with 89's and I passed my four classes with 92's and above. 
There were times when I didn't think I was going to make it through, but I just kept pushing harder. 
I pushed myself harder than I ever have before with school. I think Kris thought I was going to have a heart attack from all the stress, but I managed to get through it. 
It nice to be able to just relax without thinking about needing to study or dreaming (yes, dreaming) about organs and scanning and all the pathologies... sheesh! 
Tomorrow I am taking the day and having some ME time. Kris is gone for the weekend doing man stuff, so I get to enjoy a little of alone time. I also have a gift certificate for a massage that my friend got me for my birthday, I have been saving it because I knew it was going to be much needed after this quarter!

Finals Week!

I have SO much new stuff that I want to post about, but I just haven't had time to sit down and write it all out. Kudos to the bloggers that can post something almost everyday! Here is just a quick little update as to why I have been so busy. IT FINALS WEEK! Ahhh. Stressed to the MAX and have no time to do anything. Kris and I both got sick a few weeks ago, so that messed up our work out schedule and we just can't seem to get back into it with all the studying that we have been doing lately. I think our goal is to restart LiveFit Phase 3 after spring break. I have a ultrasound physics, vascular, and sonography anatomy/pathology class that I am studying for. The quarter has been very challenging, so I'm not sad to see that it is coming to an end. Just one more step closer to the end! I have surprised myself in many ways this quarter. All my hard work and dedication has paid off. :) My finals are Monday, Tuesday, and Wednesday....but it doesn't end there! I decided to sign up and take my ultrasound physics ARDMS registry exam over spring break, on March 27th! As soon as finals are over, I get to jump right in an study for that as well. Hopefully my brain can handle it. I will be looking forward to the afternoon on the 27th because I at least get a few days of relax-chill time-celebration-lazy days until I start classes again on April 1st.

A little bit of everything!



It's a lot harder than I thought to try and keep up with school, 
studying, homework, the gym, our puppies, andddd a blog!!
 I am a little behind with some of the posts that I have wanted to make.
 This one might get a little long. Oops. 






Frozen Bananas
1 banana cut in half 
Cover the bananas in vanilla Greek yogurt and roll in granola. 
(We rolled ours in a vanilla almond coconut granola.)
Place them in the freezer for 1 hour. 
Enjoy! 

 


Almond Joys:
Unsweetened Coconut Shavings 
Melted Dark Chocolate 
Whole Almonds 






Cinnamon Apple:
Slice up one green Granny Smith Apple
Sprinkle with Cinnamon 


 Sliced Strawberries
Banana filled with Peanut Butter 


Baked Apple Crisp:
Topping: coconut oil
agave nectar 
cinnamon 
oatmeal 
walnuts

Bake at 350 until apples are cooked. 


Almond Butter Bananas
One banana sliced
 almond butter
Freeze for 30 minutes 






Salad for dinner!


Low-fat Cottage Cheese
Cherry Tomatoes
Cucumbers
Chickpeas
Red Onion 
Peppercinis 
Natures Seasoning 
Artichokes
Green Onions 

Chicken Salad:
Salt, Pepper, Garlic Chicken Breast
Cherry Tomatoes
Cucumbers 
Feta Cheese






Sunday Morning Banana Pancakes:
1 Mashed Banana
1 scoop Banana Protein 
Splash of Vanilla Extract 
  Quick Oats 
Splash of Unsweetened Almond Milk 
 Egg Whites 
Cinnamon 
Almond Butter or Apple Butter 




Crockpot Banana Overnight Oats
2 medium ripe bananas, sliced 
1 1/2 cups unsweetened almond milk 
1 scoop banana protein powder
2 1/2 cups water
1 cup steel cut oats
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/2 teaspoon vanilla
1 tablespoon ground flax seed
1/4 teaspoon salt
Coat inside of a crock pot with cooking spray. Stir, cover, and cook on low for 7 hours.
Topped with strawberry vanilla granola

Ezekiel Toast 
Fresh Guacamole (one rip avocado, lime juice, garlic powder, salt, and pepper) 
Salsa 
Over-easy egg
Natures seasoning 


Blueberry Smoothie:
Blueberries 
Banana
Spinach 
Unsweetened Almond Milk 
Ice 
Banana Protein 

Breakfast:
Sunny side up egg
Avocado slices (drizzled with lemon juice and sriracha)
Salsa
Ezekiel Toast
  



Tried something new the other night: EGGPLANT! 
Still unsure how I feel about it. 
I made it two different ways, grilled with veggies and baked. 

Grilled Veggies:
Squash 
Zucchini 
Eggplant 
Marinate the veggies for 20 minutes 
Marinate:
Soy Sauce 
Balsamic Vinegar 
Salt 
Pepper
Minced Garlic 

Grill on each side for 2-5 minutes

Baked Eggplant:
Eggplant 
Olive Oil
Feta Cheese
Cherry Tomatoes
Artichokes 
Garlic Powder

Cut the eggplant into slices, drizzle olive oil on them and sprinkle some garlic powder. Bake for 5 minutes at 350. Take out of the oven and spread one spoon full of tomato sauce of each slice. Add sliced cherry tomatoes, artichokes, and a little bit of feta cheese. Bake for another 5 minutes at 350. 
 





Avocado Salsa Chicken: 
Chicken Breast stuffed with: avocado and salsa 
Seasoned with salt, pepper, garlic salt, minced garlic and olive oil.
Bake at 350 for 45 minutes 

Sauteed Veggies:
Cherry Tomatoes 
Spinach 
Minced Garlic 
Onion 
Mushrooms 
Balsamic Vinegar
Lemon Juice 



Had a nice lunch at Huckleberries with the husband last weekend.
Enjoyed a Mermaid Juice:
Wheatgrass
Apple
Pineapple 
Pear

I also had a blackened tofu wrap that was amazing! 


A few weeks ago I made the dogs DIY no-sew dog beds for the living room. 
I got a little too much fabric, BUT you could easily make the small dog bed with a 1/2 yard of each fabric (1 yard of fabric total for the top and bottom) and the large dog bed with 1 yard of  each fabric. (2 yards of fabric total for the top and bottom) 

I went to Joan fabrics and picked out 4 different patterns that I liked. (fleece) 
I also picked up a big bag of stuffing at Walmart.

I started by laying the two fabrics on top of each other. (both right sides facing out) 
If the edges are not even, trim the larger piece of fleece so that both pieces are even. 
You cut one square out of  the corner on all 4 sides.
Then you begin with one side and cut 1 inch strips all the way around. 
You cut the strips for all the sides.
Once you are done, you take the strips and tie (knot each pair in an overhand knot) them together.
Leave one side untied so you are able to stuff the bed.
Then finish by tying that side. 

*Our puppy has figured out that there is stuffing inside and loves to stick her nose through the holes and grab some of the stuffing, I would recommend sewing one strip around each side to keep the stuffing inside*

 They were super easy and the dogs love them! 



 


DIY Laundry Soap:
 One  box of Borax 
2 bars of Fels-Naptha soap 
One box of arm & hammer baking soda 
One box of arm & hammer super washing soda
One tub of Oxy Clean 
One bottle of crystal fabric softener

               






 Had a proud moment at the gym the other day-
I did my first pull up!
Kris said that I should just see if I could do one. 
I tried knowing that I couldn't do it...
well I was wrong! I surprised myself. 









Even with our crazy busy school schedules, we still make time to have some fun! Last weekend I had girls night and went out for Martini's and Bellini's. On National Margarita day, Kris and I went out for drinks and a nice dinner at Steelhead Bar and Grill.
